Wednesday 12-13-17 Dinner

Too much running around this week..

Had Polish Dogs @ Costco for lunch..
If hungry later, it will be bacon, eggs, hashbrowns and biscuits..

Ice cream about 6PM..

Today was the day I could run some errands. My plan was to make refried rice with shrimp, etc. Came home the caregiver gave my Mom the rice for lunch. Another scramble to have supper ready before the evening caregiver arrived. I did shrimp avocado lettuce cups with homemade hoisin sauce, water chestnuts, mushrooms, carrots, celery, peas, radishes, green pepper and green onions. Mom got sides of more peas and pineapple. Dad got five wraps and the offer to make something more. I guess I better use my "mini" fridge for leftovers I plan to repurpose.
 
I felt like getting into the kitchen and make a nice dinner tonight.

made with always available zucchini (some smoked Gouda added another dimension) together with paper thin English cucumber/white onion salad dressed with rice vinegar/sugar/white pepper.
Everything went together so well and we're stuffed and happy.
