Not really baking, except for the coconut, but I just made these for the second time. I used vanilla ice cream and coffee/espresso ice cream:

All ready to eat..

Mmmmm...good texture, chewy, puffy, moist, not too sticky, not dry, maybe could add abit more walnuts, maybe a tad more cinnamon (maybe hotter type)
