I really don't think it is the butter, I think it is the stress and guilt we are forced to endure over every morsel of food we eat!

Almond shortbread cookies

1 cup sugar
1 1/2 cup butter
1/2 cup roasted almond butter
3 cups flour

cream all together, roll or mold. I blind bake in tart pans, cool completely and add the Lemon Curd.
bake 10-30 min, depending on how light or dark you want them at 350F (177C)
