Corned beef, cabbage and potatoes done in the Instant Pot. Also Cabbage salad.

We're having spaghetti and salads. I had a rehearsal today and trying to catch up on laundry so needed something quick that I had on hand.

Kids went to the casino this afternoon.. I didn't want to go so, I stayed home and gave in to my quarter pounder w/cheese cravings.. Delicious.. :yum:

For breakfast we had croissants with Kerry gold butter. (from Costco).

It was a beautiful perfect day. We went for a walk around the lake, first time since some time last fall. Then I grilled bacon cheese burgers with blue cheese cole slaw on the side. Earlier this week when I made the dressing, I added sliced grapes to the cabbage. Looked good in some recipe's pic I had seen. T'was no big whoop and didn't seem to add anything to the salad. So no grapes today.

Meat-n-potatoes at the doghouse.

I hickory-smoked a meatloaf with on the Weber Kettle. Oven roasted red potatoes and broccoli on the side. No gravy, no sauce, just wonderful smokey, meaty goodness.

It's a gorgeous day today (low-mid 50's)
and we've got snow coming later tonight.
I'm going to grill some Cheese Burgers in a bit,
and the side will be Tater Tots and sliced
Tomatoes for DH and Cucumbers for moi.
I made a batch of my copy-cat "Zippy's Mac Salad"
https://mykitcheninthemiddleofthedesert.wordpress.com/2013/01/15/my-quest-for-zippys-macaroni-salad/
this morning, but I think I'll hold that for later.

I know that doesn't sound like any big whoops, but
where I come from, Mac Salad is a science and a coveted dish :yum:
(as I steal a spoonful quietly :rolleyes::LOL:)

DH had a chicken empanada, I had a big bowl of lightly cooked vegetables/broccoli/zucchini/cauliflower with chopped tomatoes and some kipper snacks. We finally got a hike in at the Ice age trail, there was some snow and ice but not too much.

TB has been on a staycation all week and tomorrow is his last day before going back to work. We have been pretty bad all week eating tons of things we shouldn't. Tonight was no different.

We had coupons for McDonald's and decided to use them. I had 2 filet of fish and TB had a quarter pounder with cheese and a filet of fish. I had a few fries and we split a cream egg Frostie which was okay.

My body is telling me I have to get back to my strict food lifestyle and I am afraid I have to listen.

Guinness....
A proper Irish meal.

We were going to pick up ribs while we were out buying wood for my "Woodrow"'s workshop today, but neither of us wanted to leave our warm house to go out in the blustery wind. I had bought hot dogs to go with the leftover potato salad and coleslaw, so hot dogs it was. Went "old school" and broiled them in the toaster oven - boy, did the skins have "snap". Also split a can of baked beans. Tasty, but not ribs. We'll have those to look forward to another time...

A proper Irish meal.
.

You can make it a fauncy 7 course Irish meal with 6 pack and a baked spud.

I had turkey, stuffing, gravy, and haricot vert for dinner last night. Sadly, corned beef is out for me this year.

I told my boy that I got special dispensation from the Pope to have corned beef even after giving up beef for lent, but the little sh1t replied, "Ya know, Dad, Jesus didn't fall for the temptations for 40 days..."

I told him he was adopted.

At least I get to eat the leftover potatoes and cabbage today, and then hope I spend a lot of time downwind of others.
