my famous Monday leftover risotto...

Basically the weekend leftovers added to a chicken broth risotto (this weekend was fajitas; so chicken, cheese, onions and peppers, maybe a green apple, etc...)
 
I cooked for me and Ellen Turkey with potato wedges, carrots and peas.

Nothing very thrilling, I'm afraid. Just a baked potato with butter, chives and yogurt.

Even though potatoes (and other nighshade vegetables) aggravate my arthritis, sometimes I'm willing to pay the price. And I don't feel guilty about the butter either. I don't use much but it certainly adds to the smoothness and flavor!
 
  • Grilled lamb chops marinated in lemon, olive oil, garlic & fresh oregano
  • Grilled new yellow potatoes
  • Grilled hearts of romaine lettuce
  • 2005 Domaine la Milliere Vieilles Vignes Chateauneuf-du-Pape
 
This is one of those days when nothing sounds very good. I really don't know what we will have.
