Basically the weekend leftovers added to a chicken broth risotto (this weekend was fajitas; so chicken, cheese, onions and peppers, maybe a green apple, etc...)
Nothing very thrilling, I'm afraid. Just a baked potato with butter, chives and yogurt.
Even though potatoes (and other nighshade vegetables) aggravate my arthritis, sometimes I'm willing to pay the price. And I don't feel guilty about the butter either. I don't use much but it certainly adds to the smoothness and flavor!
