Potatoes au gratin with kielbasa.

I've got red potatoes that I will slice and boil in the garlicy stock I made, taking the stock out of the freezer and thawing in the pot on low, cooking the potato slices, and returning the stock to the freezer.

I'll layer them in a casserole dish with the kielbasa slices, and top with some leftover homemade pimento cheese that I want to use up.

I use the red potatoes because IMO they have much more flavor, and the slices hold together when cooked this way.

For lunch we are going out for Mexican--it has been a very long time since we could afford to go out, so YAY!!!

James is in the mood for potato soup, so I will make that for supper. :yum:

Leftover navy bean soup and ham sammies. DH wants it instead of Taco Tuesday.
 
Roasted whole chicken
Quinoa and orzo pilaf with pine nuts and bay
Pan seared yellow squash with dill and onion
Al dente asparagas with a thin mayo based sauce on the side.

Drinking some Rosenblum Syrah with it.
