What did you have for lunch today, if anything?

I got some beautiful shaved beef and corned beef from the deli yesterday so Dad and I had sandwiches (him beef, me corned beef & swiss) on fresh multigrain bread, with a small side salad. They were extra tasty somehow!

I made DH a luncheon salad with romaine, veggies, avocado and some of the shaved meat.
 
mashed a hard cooked egg with mayo and some honeymustard, put on toasted wheat bread, a few potato chips and curses a coke:LOL:

Hubby stayed home to escort me to a dr.'s appt., & we lunched at a favorite local bistro.

Both enjoyed a cup of extra-spicy Manhattan Clam Chowder, followed by in-house smoked chicken & goat cheese quesadillas for hubby, & a large 100% blue-claw lump crabmeat cake (ZERO filler!!), topped with a perfectly poached egg & served with a spicy Remoulade sauce. Wonderful!
 
I am not an egg eater....unless I pile them with things I like. So today's lunch was a two-egg scramble with crimini mushrooms, Genoa salami and some Danish Brie cheese I treated myself too, plus fresh chives and oregano from my herb garden. For me, the eggs are just binding for the rest of the ingredients! :)
 
i made steak-umms with red pepper boursin sandwiches today.

my god, steak-umms are gross. the pan i fried them in was really greasy afterwards, and i didn't add any fat. yuk!

the boursin helped hide the grossness, though.

Forgive the Canadian in me but what are steak-ums? They don't sound appetizing. But I love boursin!
 
they're supposed to be thin sheets of frozen shaved beef. they fry up in a few seconds, and are supposed to be perfect for cheesesteaks.

but these were disgusting. i remember them being tasty when i was a kid, but as in many things, they apparently have gotten cheaper and fattier.
 
Pasta with italian sausage and grape tomatoes.
I had something similar for dinner last night.... I used Roma tomatoes cooked down with butter, adding sliced bell pepper, seasonings (salt-n-peper, garlic powder, red pepper flakes, fresh basil at the end), sliced polish sausage, topped with grated cheese and tossed with cooked spaghetti... garlic bread on the side.

Yesterday I made tomato soup and added some ramen noodles. On the side, a peanut butter sandwich.... my old favorite.
