Today I had leftover homemade Chicken Fried Rice from the other night's dinner.

mexican food! yummm! cheese echiladas with green sauce, rice, and beans

Yesterday I made a frittata out of the leftover sauteed Swiss Chard & Provence potatoes from another night's dinner. Delicious!

And today I enjoyed an impromptu "fish taco", using a leftover Cajun-marinated catfish filet from dinner tucked into a warmed corn tortilla & topped with green salsa & fresh farmers market lettuce.

I ate at a Chinese buffet restaurant with friends for lunch. I had a small sampling of many of the foods offered, but probably half of my plate was mushrooms.

Enjoyed the leftover sliced chicken over feta spinach with orzo on the side from the other night's dinner. Still delicious.

A D'mater sammich with lots of Dukes, Salt & Pepper....A wash cloth for a napkin...paper towel just wouldn't cut it....Ice Cold Arnold Palmer to wash it all down!

UB, we just got our first tomatoes yesterday. They are delicious. I ate some of the cherry tomatoes right off the bush.
