My DH has family in Australia, so he has been there. He told me about an unprepossessing Chinese resto, probably in Hahndorf in Southern Australia. He said it was the best Chinese food he had ever eaten. He later heard that many chefs who rated 5 stars in Asia went and worked there. If they did well there, then that gave them a reputation that counts in Europe, so it was a jumping off point for them.
