This morning I had an omelet stuffed with Neufchâtel cream cheese and last night's leftover salmon. I also mixed a little fresh dill into the eggs.

I don't eat breakfast often. I do like it but just busy mornings. Most important meal of the day? For me, dinner.

Swiss rösti...sounds like breakfast, but it's more of a lunch.
Topped it with cheddar (no gruyere in house today) and two country style fried eggs. Pretty rich meal.
