It is not bad as long as it does not come out dry and is eaten right away. Once the Mofongo is cold it hardens and not becomes dry.

Oatmeal, again - my cholesterol is so gonna love me! 3 days in a row. Gotta get it while the weather is still cool 'cuz I don't like hot cereal in summer.

A gluttonous portion of buttermilk biscuits for two-
2 C AP Flour
1/2 tsp Salt
1/2 tsp Baking Soda
2 tsp Baking Powder
1/4 Lb Butter(unsalted)
3/4 C (6 Oz) Buttermilk
Baked 12 minutes at 450F.

That looks great! I've been known to have leftover vaca frita, yucca con mojo, blackbeans and rice for breakfast. Unfortunately, there were no leftover maduros.

Oyé that sounds good, pero I don't do yuca or maduros. Pero el arroz with ketchup or fried eggs I do all day or night with problem.
