Had breakfast for dinner -- and used my waffle maker for sweet potato hash browns!! I added some crumbled bacon, a small shallot and a clove of garlic to the shredded sweets before waffling them. I brushed the iron with olive oil before cooking as well. They were the perfect combination of crispy and soft. Yummmm

I made a proscuitto and asparagus oven omelette. Topped it with Fontina cheese, one of my favorites. And my usual too many cups of tea...English style.

I've been going simple for a while. I have one slice of toast--home made bread and a small chunk of queso fresco with fennel seeds.
