We had a fantastic Frittata made from leftovers of Gyro meat, grilled mixed veggies (zucchini, onion, mushrooms, bell pepper) , cheese, some fresh spinach and eggs. It turned out so nicely, as for once I didn't over cook the Frittata in the oven. It tickles me to turn leftovers into a masterpiece!
