Returning to the theme of this thread.....I have discovered a more eggy way of making scrambled egg (on toast).

I know you can add an extra egg yolk but I find it makes little difference....maybe more than 1 egg yolk might but sounds extravagant for a breakfast. Instead of cracking 2 eggs into the pan, I just added 1 egg and the egg white of the other one. When the scrambled eggs were lightly done (how I like them), I then added the raw yolk into it and mixed it in. Result? Definitely the more eggy scrambled eggs I had been desiring!

With the hours I keep, I will be having breakfast around seven tonight. And it will be a quick soft scrambled eggs.

I took one of the leftover veggie burgers (raw), added some savory, sage, pepper to it and turned it into breakfast sausage, topped with one poached egg and a side of garden fresh green beans and steamed kale (in my world, kale is "breakfast of champions" food). No bun, no cheese, but the veggie burger turned breakfast sausage was very good. I didn't have time to do grains today--gotta get my butt in my office and get to work. Good thing I work from home--it is only a 10-second commute from the kitchen to my office.

I ran out of bread so had to resort to a deluxe kind of muesli. To an organic muesli base (with different rolled grains and some dried fruit), I added oatbran, chopped banana and organic sunflower seeds, dessicated coconut and dried apricots + milk (would have preferred natural organic yogurt). It was scrumptious!

Two poached eggs on a HUGE bed of steamed Chard (my feet were still wet from grabbing the chard from the garden--yesterday's egg, sigh, old eggs, but they were still good), a side of cargo rice topped with fenugreek sprouts....YUM.

SO has had a desire to make almond biscotti so I hunted up a recipe for her. It is an ATK recipe and I had DVRd the ATK episode where they made this biscotti. So we watched it Wednesday night and Thursday AM she whipped up a batch.

I'm sitting here with a cup of coffee making them disappear at an alarming rate. I suppose I should save her a few.
