What have you had for lunch lately?

I often have leftovers for lunch. Today it was ribs and pasta salad from Sunday.
I often cook with the intention of creating leftovers for lunches. Darn kids sometimes foil my plans if they really like it, but it usually makes packing lunches easier.
 
Wednesday ~ 7/29/20 ~ Lunch

I'm gonna wind up paying for this:

East Coast Style Hoagies for lunch.
I can't get Amoroso Rolls, so I sub for what I can find, Bolillo Rolls
Boar's Head Brand, Hot Cappacolla, Genoa Salami, Pesto-Parm Ham,
Picante Provolone Cheese, sliced Tomatoes, Onions, Romaine, Hot Cherry
Peppers, Granulated Garlic, dried Oregano, freshly ground Black Pepper and a good drizzle of Extra Virgin Olive Oil
we shared a can of Coca Cola and some Ruffles Potato Chips

I already took an anti-acid
 
I follow this gal on another social media site and she makes Asian dishes.
She posted a recipe for Dumpling Dipping Sauce and I have all but 2
of the ingredients, and of course I can't find them here in COWBOYVILLE USA!

So, I was poking around at Fry's aka Kroger's and found this

BINGO!!

I offered a dish of Dumplings and this new sauce I found to DH for lunch, but he declined and instead made him a BLT on Rye.

I sat down at the table with my lunch and got, "HOA MAN! Can I have some of that?" :glare:

That was delicious!
I forgot in my haste to devour my Dim Sum lunch to add some snipped Green Onions, but MAN! That was out of this galaxy GOOD!
 
Thursday ~ Aug. 13, 2020 ~ Lunch Out

Wildflower Bread Company, a local chain restaurant in Arizona.
I had the Wildflower Two, your choice of soup, salad or sandwich combo.

I chose the Southwest Superfood Salad:
spinach, quinoa, slow-roasted tomatoes, avocado, black beans, roasted red bell peppers, cilantro, dried sweet corn, goat cheese & toasted pepitas with cilantro lime vinaigrette
along with
Turkey Breast & Brie with roasted red peppers, lettuce, tomatoes & grain mustard on Nine Grain bread

DELICIOUS!

I hadn't been to this restaurant in years and had no idea that they now serve beer and wine, perfect lunch out with the Gal Pals!
 
We love quesadillas.

I went real simple today Ross.

Two Flour Tortillas from the Carniceria that I had in the deep freeze
1/4 of can of Black Beans
1/4 C. Trader Joe's Fire Roasted Corn Kernels
(both of the above from the deep freeze too, so I zapped `em for a coupla seconds to de-frost as well as heat up a wee bit)
some grated Sharp Cheddar Cheese, `cuz that's what I had
a hot, dry skillet, flip it over once and
BAM!
Lunch was served

I'm really full, those Tortillas are kinda on the large side, but very good!

I contemplated adding some kind of meat, and other toppings, but honestly for just a quick lunch for one, it was great!

That sounds really good. I'll make a note of it. Sorry it upset your stomach, though ;)
 
DH wasn't feeling quite up to par this morning,
so I put him back to bed and the poor thing
slept for 5 hours.
When he woke up, of course he was starving!

DH: My Mom would make me Chicken Noodle soup when I didn't feel good, do we have any?
Moi: I don't have any made, but I have everything to make it. Gimme about 30 minutes.
DH: You're gonna MAKE Chicken Noodle Soup? NOW?! Don't we have canned Soup?
Moi: :glare:
DH: No, really, you don't have to do that, I mean ...
Moi: I can do that.

Yesterday, I tore out the tomato and pepper plants. Using the pepper leaves, I made a chicken tinola. I used chayote squash rather than using green papaya. It was tasty and good for a chilly day.

We didn't have our usual Sunday Brunch today,
`cuz I wanted to get out of the house early to
do my grocery shopping without many folks about.
In this very small town, most people attend a Church Service
of some sort between 10am and Noon, so ...

Once I had everything unloaded and put away,
I put together a stellar Sunday Lunch for two, IMHO that is :LOL:
Clubhouse Sandwich on a Costco Croissant with Chips and a Coca Cola.
