I bought some low GI rye crispbread yesterday so I'm thinking of making some hummus to spread on to them for lunch or maybe tuna salad. With a GI of only 11 per serving of 2 and no sugar I think this is a good option.

Freshly home-baked hard rolls with thinly sliced three year old heavily smoked bacon.

Yesterday's lunch was leftover vegetable casserole and a turkey-swiss cheese-kale-cranberry salsa sandwich on a homemade whole wheat bun. I weighed the turkey and cheese so as to only eat 1 portion of each. The bun was the size of a "hockey puck" (the portion size recommended). Kale was not measured. Salsa was 1 T. It was very good. But, I love turkey-cheese-kale-salsa sandwiches! Today's lunch will probably be the same sandwich and an orange.
