Mac'n'Cheese with Sun-Dried Tomatoes

Plan A was chicken, but it was still frozen, so I threw this together.

We had pan seared sea scallops (dry pack), garlic bread and tossed salad.

The sauce was sharp cheddar with the tomatoes mixed in. On top I put Chevre and grated sharp Romano.
