Peanut Brittle

2 3/4 cups granulated sugar
1/2 stick unsalted butter
2/3 cup water
1 1/2 cups lightly salted peanuts

Grease and line a 9 x 13-inch pan with foil.

In a large, heavy saucepan over moderate heat, cook the sugar, butter, and water, stirring occasionally, until the mixture becomes a golden-brown syrup, about 25 minutes. Remove to a cool surface.

Stir in the peanuts and pour mixture into the pan, spreading the nuts evenly.

Let peanut brittle set and cool before breaking into bite-size pieces. It can be stored in an airtight container in a cool, dry place for up to 1 month.
 
Thanks Julie! My SIL was mad because her grandma gave me some homemade peanut brittle and not her (oops!) so I'll make her some.
 
Turkey sandwich, pretzels and strawberry yogurt. It took a lot of willpower to not stop and get pizza when I was out running errands over lunch!
 
well i'm not vomiting anymore. still a bit queasy though.
and my body is still sore. think i bruised or pulled a muscle
on my side due to the 14 hours over the toilet
 
Chicken breast stuffed with parsley, sage, rosemary, thyme, and gorgonzola with outside seasoned with garlic and onion powder and more herbs and butter and chicken stock and baked, left from last night, even tasted good at room temperature, then had coffee and a toasted piece of orange pound cake.
