Geez.... we are really slacking off on the dinner threads lately. :LOL:

I made shrimp scampi tonight with shirataki noodles. It was my first time using these noodles. They reminded me a lot of ramen.

Not the best photo, but it actually tasted great.

I marinated a pork tenderloin in a wine and herb marinade and grilled it. Also made some roasted red potatoes.
 
Busy day, so i doctored up a stove-top chicken/veggie/pasta dish. Added a bit more chicken and a lot more veggies, plus amped up the seasonings. Our tossed salads had a generous portion of kale. I massaged the stuff to soften it a bit. That worked, but the danged things were still impossible to keep on the fork! :LOL: From now on our kale will be of the cooked variety, more likely than not.
 
I made Parmesan-crusted pan-seared pork chops, green beans simmered in onion-tomato-garlic sauce and yeast rolls with garlic butter. Looovvv those yeast rolls!

Did another variation of Kimchi egg rolls. This time I mashed chickpeas and added those to the drained homemade kimchi. More kimchi on the side. Absolutely addicted to kimchi egg rolls...
