What's for Dinner Monday March 5/12?

I have a big 'ol hunk of beef roasting in the oven for dinner along with some potatoes.

Roast beef,mashed potatoes and gravy sandwiches and a lettuce salad with French dressing.

beef stew encore. It was pretty good yesterday, will be as good or better today.

I keep threatening to do meatloaf again... soon.. soon...

I put brown sugar and liquid smoke in my meatloaf so it tastes more like a teriyaki jerky than plain old meat loaf. I also use oats instead of bread crumbs.

DH is off to a role playing game. They will order something at the game. I'll have a "chateaubriand" steak (it's from that cow, so I doubt it will be tender) and probably steam some broccoli to go with the steak.

Cooking some chicken legs in home made cream of mushroom soup.

And some stir fried asparagus

I also use oats instead of bread crumbs.

Oats are a great binder in meat loaf; makes it nice and tender.

Had a serious beef attack so just had to stop & buy a couple ribeyes - they were great with baby reds and green beans.

I think I am going to stew some beef slices in tomato sauce and serve it all over spaghetti. I have a few chunks of eye or round I have to use up.

Couldn't find any spaghetti, went with Rigatoni. Baby spinach salad.
