I sent all the leftover turkey home with my son, but I have an abundance of ham we are getting sick of.

I made a good Frittata for dinner..... chopped ham, cheese, mushrooms, spring onions, bell pepper, black olives and mixed the eggs with some cottage cheese. Topped it with lots of Parm, and finished it in the broiler. Darn tasty, and fast.

i'll be making a nitetime dinner of pan-cooked chix, sauce (bleu cheese whisked into creme, w/ sliced or chopped olives; reduced, & seasoned). i have brussels sprouts prepped & am roasting those, & may make carrots.
