I just bacon wrapped a couple of beautiful Filet's to be pan fried in my my Eiffel Tower carbon steel pan.

We'll have salads and baked spuds with them.

Good lookin' pics, all!

I spent most of the day with a good friend that I hadn't seen in a few months. We went out to lunch early afternoon, chatted, and stuffed our faces :yum:. I'm still full, so no dinner this evening. Maybe a bowl of cereal in a couple of hours. :)
 
SO has been asking for pizza lately so yesterday made a batch of dough and tonight we had a pepperoni and onion pizza for dinner. SO was pleased.

Man, some really good looking dinners tonight.

Sunday has become sort of special thing for my family as I get home around noon with something different every week for lunch.

Today, I picked up American cheese, long rolls, and Vermont butter, and I sliced the leftover eye round to make a couple of big "Balboas" for us to share. That

A Balboa (named after Rocky Balboa) is warm, rare roast beef on thick, toasted, garlic bread, topped with raw sweet onions and melted American cheese. Wow is it good. Less greasy than a Philly cheesesteak.

Then, my son decided to cook dinner for us. I'm not only impressed at how it came out, but also the corrective steps he took after tasting things as he went.

He intended to do a flounder sauteed in some kind of curry sauce, and coconut rice.

He decided to ditch the curry after tasting it with the other ingredients, so it was more of a soy/ginger/garlic flounder. Not great, but not bad. I was happy that he kept tasting as he went.

But then, his coconut rice was fantastic! Almost like a coconut risotto. I hipe he either remembers or wrote down what he did.

Nope. I did the braise the old fashioned way, in a cast iron DO. Seared the meat up front in the cast iron. They were braised in Angry Orchard crisp cider, and some beef stock.

It came out great. I served it with some garlic mashed potatoes.

I cooked a big piece of roast beef yesterday. I quite often do for cold meat sammys. Tonight fresh white bread with sliced beef onion sliced lots s ans p.
Then home made Mayo. The one mum used to make with condensed milk.
Might sound odd but it works.

The best way to eat these is to remove the silicone bands (save) and cut the filets in half, cut side down on your plate so you can get a bite of bacon with each bite of beef.

Good eats to be sure.

I was missing salads, so I made good sized ones tonight. I also took the one serving of Won Ton soup I didn't eat last night, added in the last of a carton of chicken broth and the leftover noodles from earlier this week, and we shared that. Didn't get to the last of the leftover smothered chicken, nor the small mac-and-cheese I pulled from the freezer. I bet you all know what we'll have for supper tomorrow night...:LOL:
