What's for dinner Thursday 5/20/2010

Last night was some wonderful "Lemon Pepper Catfish" (filets lightly coated with mayonnaise, then liberally sprinkled with McCormacks California Style Lemon Pepper seasoning & baked for 25 minutes @ 375 degrees in an oiled baking dish), served with cubed yellow & zucchini squash sauteed in extra-virgin olive oil with some granulated garlic & dry Italian-seasoned breadcrumbs, & a packaged "Herb & Butter" Knorr noodle side dish mix.
 
This was our dinner last night. I didn't use breadcrumbs. The chicken breasts were lightly coated with parmesan cheese, italian seasoning and garlic salt atop egg noodles. On top, was some leftover pasta sauce and cheddar cheese. On the side were assorted vegies and toasted sourdough english muffins.
