I am not a fennel lover but all else sounds perfect. adore the pear idea...
Do you have a thermometer for the chicken to check for doneness?
Rosemary is a good thing to toss into the cavity as well as lemons sprinkled with a bit of cinnamon................
let us know how it turns out..............
Thanks for the vote of confidence....well the Fennel is out as I did not make it to the market at lunch becasue I had to go to the bank

So I am gonna have to make it with whatever I have at home. No thermometer but it has a popper.

Wish me luck.
Glad you feel confident enough to 'go for it'-hope you are stuffed

I'm not cooking tonight!!! I made myself do something I didn't want to this morning so I'm rewarding myself with a little trip to the coast so it will be a seafood restaurant tonight!
