What's for Supper, Tuesday, September 8th?

I made a really good chicken broth yesterday in the process of making or dinner for last night. So, I'm going to use that and make chicken-noodle soup. The soup vegies are carrots, celery, onion, and a bit of diced tomato. I'm planning to use egg or rotini noodles. I have to see what I've got.

What is on your supper plate? ....I'm sure some of you are having leftovers!
 
It's cool and rainy here. I wish I had some onions and green peppers to make a nice pot of chili. I'm not going out in that mess to get some so will have to improvise. Maybe I have something in the freezer.
 
It's not quite 8:00 a.m. here, but I still put a meatloaf together and just got it into the oven. It's better to do it now in the cool of the morning than later in the day when it gets warm. I think I'll have creamed corn and sliced tomatoes with the meatloaf.
 
Pulled Pork Sandwiches from a Pork butt I BBQed yesterday...I got it on too late yesterday for last night's supper...Pulled it of the pit after 13 hours at 10:00 last night.
So tonight...the sandwiches, slaw, maybe some recycled tator salad, and beans..Whatever is in the refrigerator....The spare ribs were good last night.
 
I'm not sure about tonight, because it's always an inspiration 1 hour prior.
But last night, Orange Chicken Stir Fry over Brown Jasmine Rice.
Brown rice has so many benefits that most Americans ignore.

Sorry, I don't write recipes, just procedures.

2 chicken breasts, sliced julienne
Onion, julienne
Green Pepper, julienne
Red Pepper, Julienne
Broccoli florets
garlic, minced
ginger, minced
Orange Juice
Cornstarch slurry
Sesame Oil
Crushed pistachios for garnish

Heat saute pan until drops of water evaporate immediately
add sesame oil and chicken strips quickly. Sesame oil will smoke very quickly.
Add onions, saute
Add peppers, saute
add aromatics, saute
add broccoli florets
Deglaze the pan OJ
Cover the pan to steam all vegetables
Slowly add cornstarch slurry to thicken sauce to desired consistency.
Reduce sauce by evaporation if needed.

Plate over Jasmine Brown Rice, garnish with pistachios.

i took chop meat out of freezer and if it thaws in time dinner will be meatloaf or meatball "burgers", spinach, mashed taters and gravy (brown gravy or tomato sauce depending which way i make the meat).
if the meat doesn't thaw in time i have no clue.

I haven't had cream corn in awhile... that is a nice side to comfort food meatloaf! Sliced tomatoes are a nice touch! :)

Well, ya can't beat a pulled pork sandwich with potato salad and beans! They just go naturally together! :chef:

Sounds good! My BF loves orange chicken with rice..... and he eats brown rice!

SO worked me like a rented mule this weekend then we had the kids over for a cookout yesterday so tonight's dinner was a quickie.

We had a meal of sausage stuffed pasta I had bought from Costco topped with some homemade sauce out of the freezer.
