Either using leftover ingredients from last night's enchiladas to make tostadas or coconut shrimp.

I want to know what you have leftover from ehchiladas that could be made into coconut shrimp.

I was a little confused by the thread title. I am assuming this is the daily meal thread.

I have a condo board meeting tonight so I'll be defrosting a serving of black bean soup with andouille. SO is on her own tonight.

Fresh Steamed Mussels in White Wine

The reason we celebrate this day, is, the former Roman Emperor, Julius Caesar was born on this day ...

We are having steamed mussels ( in season now ) at the Bar across the street from our loft and some wine ... and the special tapas of the day ...

This entire thread made me smile.

Tonight will be roasted spaghetti squash topped with a butternut squash sauce with ground chicken, and roasted veggies.

thanks for reminding me about spaghetti squash! i like it a lot every time i have it, but haven't bought it since way last year. my only problem with it is the hard to break into shell. i like to cook it and scoop the "spaghetti" strands out of the half-shell....
