We went out to dinner last night at a new Irish Pub in our town. It was fantastic there, and we felt just like we were back in Ireland again, complete with Irish dancers.

We had Boxty (potato Irish pancake) with the best ever tender pot roast cubes with Guinness beef gravy. The large Boxty was folded over with the meat and gravy inside, and gravy on top, looking like an omelet. It was just delicious, and I'm anxious to give it a try at home.

Life is not measured by the number of breaths we take, but rather by the moments that take our breath away.
