We had chicken schnitzel, red cabbage, and spatzle. Craig had gravy on his, just a little on mine.

We're having "Gringo Enchiladas" adapted from a previous recipe of mine. If anyone is interested, I'll be posting the recipe as soon as I type it up.
SC will make glorified salads.
 
I tossed some thigh meat on the grill, and made a spicy grilled chicken po-boy.

We call them "stuffed baked potato" but they're really "nuked smothered potato". The russet was completely hidden by ham, broccoli, and cheddar cheese, but it's under there!

I braised some pork loin chops in gravy with apples, onions, sage and thyme. Microwaved a rice medley with Penzeys Fox Point seasoning and steamed garden green beans and red pepper with Penzeys 4/S Seasoned Salt.

Had the grandkids again last night so we had spaghetti-Os and salad last night, and went for frozen yogurt for dessert with parents later.
 
Ham and scalloped potatoes with lots o' mushrooms, topped with cheese.
