Sounds good. Do you actually use pancetta or do you do what I usually do, substitute bacon? Do you cut the chuck roast into pieces/chunks? If so, how big?

I used pancetta but bacon would be a fine sub. I keep slices of pancetta in the freezer.

I made chicken with apricots and dates in a Morrocan spice mix. Served over whole wheat couscous scenes with argan oil.
In our house, dog hair is a condiment!

Evil, evil food tonight. I grilled cheese sandwiches that included bacon AND hot dog. Sides were potato AND pasta salads. I think we've reached our carb/sodium/nitrates limit for the month...and half of May. A return to more sensible eating tomorrow.
