What's your favorite cured meat?

Love bacon, also smoked (Spanish style) chorizo, but my favorite is smoked pork chops. They are readily available here and they are delicious.

Ham and bacon, hm, what a sad story. I really am surprised that cured meats have not become more popular in the North America. What did those poor pioneers ate? No wonder, I guess, they were dying left and right.

Europe did not need to be researched and developed but never the less there so many varieties of cured meats. Any European store has them in abundance. If you are lucky enough to have an Italian, or Polish, Russian store in your town go there, don’t be lazy. There you will find real cured meats. I almost guarantee you that bacon is not even considered cured meat.

Moving to Europe changed my life in many ways...I have to say really good Spanish Iberian Ham. "Jamon Iberico"! A little like Italian cured ham...but better, I think.
