Alix's Spinach Salad

5-6 cups washed and dried baby spinach
1/2 long english cucumber diced
handful of chopped snow peas
handful of washed grape tomatoes
1/2 package of smashed ramen noodles
1/2 cup toasted sunflower seeds
cayenne pepper to taste


Dressing:

1 tbsp lemon juice
1 tbsp balsamic vinegar
1/2 cup EVOO
1/2 flavor package from ramen noodle package

Toss the veggies in a bowl, sprinkle cayenne pepper on the veggies and toss so that there is a bit on all the stuff in there. Toss on the smashed noodles and the sunflower seeds. Do not toss the salad, serve as is. Serve the dressing on the side in a pretty bottle so folks can drizzle their own on. This way, the crunchy stuff doesn't migrate to the bottom of the bowl.

Substitutions: I've used paprika instead of cayenne and it is also a hit

BT, I know you will like the cayenne kick, it was a big hit for Kate and I too.

I think Madeleine is pretty glad she didn't get stuck with Edith. I think it would be more appropriate for LP Beier's daughter's than mine. I don't bake many cakes, I'm more a cookie and pie girl.
