I haven't tried this yet but thought it sounded interesting.

Apricot-Spinach Salad

Ingredients:

1 can black beans
1 medium red bell pepper
1 green onion
1 tablespoon cilantro
1 clove garlic
1/4 cup apricot nectar
2 tablespoons salad oil
2 tablespoons rice vinegar
1 teaspoon reduced sodium soy sauce
1 teaspoon fresh ginger
4 cups spinach

Preparation:

Combine first six ingredients. Shake the next five ingredients together in a jar. Pour liquid mixture over bean mixture, cover, and chill for two to 24 hours.

Top spinach, in a bowl, with bean mixture.
