Par boil 4 med boiling potatoes, add salt and cover and bring to a simmer.Cook til tender when stuck with a knife. about 20 min.drain let cool a bit then peel and cut into 1/4 in slices. Bring another pan of water to boil and then add,1 lb. of green beans and salt cook til beans are tender about 8-10 min. Drain,let cool, pat dry then cut into pieces then add to a large bowl along with the potatoes and 1 small red onion sliced and diced:LOL: in another bowl whisk together 1/3 cup evoo,3 tab. red wine vinegar, add chopped basil about 1 tab. plus 1 tab. of fresh mint, and 1 of parsley. salt and pepper and a splash of Tabasco. Pour over beans and potatoes, toss easily taste and adjust seasonings. One idea I plan to try is to put some crisp fried pancetta or bacon.

That's about the way we make it, except we use some of the green bean cooking water to cut the vinegar's acidity, add a little garlic to the marinade, and sometimes use a little Minor's beef or chicken base in the green bean cooking water. We usually add one or two teaspoons of pesto to the warm marinade.
