Par boil 4 med boiling potatoes, add salt and cover and bring to a simmer.Cook til tender when stuck with a knife. about 20 min.drain let cool a bit then peel and cut into 1/4 in slices. Bring another pan of water to boil and then add,1 lb. of green beans and salt cook til beans are tender about 8-10 min. Drain,let cool, pat dry then cut into pieces then add to a large bowl along with the potatoes and 1 small red onion sliced and diced in another bowl whisk together 1/3 cup evoo,3 tab. red wine vinegar, add chopped basil about 1 tab. plus 1 tab. of fresh mint, and 1 of parsley. salt and pepper and a splash of Tabasco. Pour over beans and potatoes, toss easily taste and adjust seasonings. One idea I plan to try is to put some crisp fried pancetta or bacon.
