I am having company for the next two days and have been making a few salads to have on hand. I had intended to make the black eyed pea salad GB posted recently, but I was short a few ingredients. So this is what I made and it is might good tasting.

Bean Salad

3 cups beans, I used cannellini (1 cup dried beans)
2 cups corn kernels, I used frozen
1 red onion chopped
1 cup celery, finely chopped

1/2 cup olive oil
1/2 cup red wine vinegar
2 T. fresh lime juice (I used 2 drops lime oil)
1 T. lemon juice
2 T. sugar
1 T. salt
1 clove garlic, crushed
1/4 cup parsley, chopped
1 t. cumin
1 t. black pepper
1/2 t. chili powder (I used med. hot)

In a large bowl, combine the beans, corn, onion and celery.

In a small bowl, whisk together the remaining ingredients.

Pour over vegetables, mix well. Chill thoroughly and serve cold.

You can use black beans, kidney beans too.
 
Uncle B, you may add what ever your pea picking heart desires. Being a land lubber all my life, I just do not think of such things.
