I just had to share this with you guys -
My wonderful friend, Natalie made this once for a social, 3 years ago. Since then, that's all she's allowed to bring, as we are vultures over it!
It's super easy too
Natalie's Bokchoy Salad
1 large head bokchoy
1 bunch green onions
(chop these 2 together; include all parts of bokchoy & green onions)
Melt 1/4 c. butter on a cooie sheet; Break up 2 pkgs of Ramen noodles into small pieces. Mix with butter and brown on both sides in 450 degree oven. Stir often. When brown, add 1-1/2 c. sunflower seeds. Set these aside.
Dressing Mix
1/2 c. canola oil
1/4 c. rice vinegar
1/2 c. sugar
2 Tbsp soy sauce
(Optional: spices from the ramen)
Keep these 3 parts separate (the greens, the toppings and the dressing) and mix them together right before serving.
