Carrot Raisin Salad

3 cups shredded carrots
One 17 ounce can apricot halves, drained and chopped
1/2 cup sliced celery
2/3 cup raisins
1/4 cup chopped walnuts, toasted
1/2 cup mayonnaise

Combine all ingredients, tossing well. Cover and refrigerate before serving.

Thank you so much for this! It was just what I was looking for to change up the buffet for fall! Made it today...and love it.
 
The apricot halves are such a nice addition! Thank you Mish! (Betcha pecans would be scrummy too, huh?)
 
The recipe looks good. If dh likes that one any better than the recipe I use now, It would be amazing. He eats it as salad, and what is left he eats as dessert.
 
Oh my, I haven't made carrot/raisin salad forever!! the addition of apricots sounds interesting!! My mother's dressing for this salad was mayo, a little milk and little sugar - kind of a purist's miracle whip... ;)
