Cold shrimp green salad suggestions.

Seeing as how it's warmed up, I'm making my family eat healthy tonight, tossing a green salad and topping it with shrimp. Here's what I have
Spinach and Spring mix salad greens, black olives, cucumber, red onion, and bleu cheese crumbles. Anyone have any suggestions for further salad fixins?

First thing that came to mind was an old-fashioned shrimp louis. Add sliced hard-boiled eggs, sliced tomatoes, shredded carrots and/or beets (if you like), and serve with thousand island dressing.
