Curried chix salad

-chix breast
-mayo
-english cucumber
-black pepper
-seasalt
-grn. curry paste

poach chix breast. cool & remove meat; shred or medium dice meat.
peel/sm. dice the cuke, combine with remaining ingredients. chill.

Wow that sounds good. I haven't thought of doing that with green curry paste before, even though I always have some on hand. I think I will add some peppers to it too! Thanks for the recipe.

Try substituting apples and some dried cranberries for the cucumber - I fill that mixture into a whole wheat pita for lunch. As long as you wait to fill the pita until lunchtime, the chicken salad mixture holds up very well.
