CWS' Black-eyed pea salad

For some reason, a friend got several cans of black-eyed peas. Not sure why, anyway, her family won't eat them, so she gave them to me. The KN won't eat them, but I love legumes of every kind. My first thought was to turn them into hummus but decided to make a bean salad. Here goes:

1 cucumber, peeled and seeded, diced
2 tomatoes, diced
2 green peppers
1 cob of corn, corn removed
4 radishes, julienned
3 green onions, chopped
1 can black-eyed peas, drained and rinsed
a bunch of basil, mint, and cilantro, chopped
some nasturtium leaves and flowers
chopped black olives
pepitos
EVOO
Apple Cider vinegar
S&P

Toss everything in a tupperware container, adjust seasoning to taste, Chill 2-3 hours. I thought of adding either bow-tie pasta, bulger, or cous-cous, but decided not to add carbs.

Sounds good - I love legumes too, CWS! I am always making salads in the summer, usually using chana dal, and I usually add some sort of grain, or similar whole food. I just had the lentil salad again today - I knew that a friend who was going to help me today in the garden loves the stuff.
