Florida Frozen Fruit Salad
1 12oz. can frozen orange juice concentrate, thawed
1 can water
1 cup sugar
2 T. lemon juice
6 bananas, cut up
1 20oz. can crushed pineapple, do not drain
2 16oz. cans apricot halves, drained and quartered
Mix all ingredients except mayo and paprika together and pour into muffin tins lined with paper cup liners. Freeze.
After frozen, remove from muffin pans and return to freezer in plastic bags.
When ready to serve, place upside down on lettuce leaf, remove paper and top with mayonnaise and a dash of paprika, if desired. May use other fruits if desired.
