Fresh Lemon Dressing (more a reminder than a recipe)

Hi everyone,

So, I had always heard people talk about this "lemon vinaigrette." But I never made it until today. Here goes to one of the best dressings I've ever had. Of course, this is probably more of a reminder than mind-numbingly new recipe.

equal parts extra virgin olive oil and lemon juice
salt
pepper
honey (optional -- just a little bit, to taste)

Mix the oil, juice, salt, pepper, and honey together. Pour over greens. It's excellent with parmiggiano -- salty from the cheese, fresh from the dressing. Basil and parsley would go great in the salad, and I bet this would even work with cilantro and lime juice subbed for the lemon for a simple Mexican salad. Can sub other citrus juice, too.
