Ginger Salad Dressing

This also could be used as a marinade.

GINER SALAD DRESSING

1/3 cup coarsely chopped onion
1 celery stalk, strings removed and coarsly chopped
1/3 cup olive oil
2-1/2 Tbs rice vinegar (not seasoned)
1 Tbs finely grated peeled fresh ginger
1-1/2 tsp Asian sesame oil (I use the roasted sesame oil)
1/4 tsp finely grated fresh lemon zest (I have also used lime)
1 tsp fresh lemon juice (use lime if used lime zest)
1 tsp mirin (Japanese sake cooking wine)
1 tsp sugar (I use raw or brown)
1/2 tsp salt
1/2 tsp black pepper

Put onion in a colander and rinse under cold water. Transfer to a blender adn add remaining ingredients. Puree until smooth. Yield ~1 cup
