Macaroni Salad

small shell pasta - 1 lb. - cooked, drained and cooled
tuna in water - 12 oz. can - drained and flaked
extra sharp cheddar cheese - 1/2 lb. - cut into small cubes
large tomato - chop meat small (peel skin before chopping and roll into a rose shape for decoration - optional)
Celery - 4-5 stalks - chopped small
Onion - chopped small
Fresh parsley - chopped fine
Salt and ground black pepper
Pinch sugar
White vinegar - to taste
Dry mustard - to taste
Sour cream - 8 oz.
Scallions - 1 bunch - chopped fine
Mayonnaise - 32 oz. bottle

In large bowl add all ingredients except tomato and pasta. Stir well to combine. Add cooled pasta stir well. Add chopped tomato on top of salad.

To decorate: Place tomato rose in middle and several whole parsley leaves to complete your rose.

Refrigerate several hours to cool and blend flavors.

small elbow pasta,cooked,,,,,couple hard boiled eggs grated. celery, chopped, onions chopped, olives sliced , mild green chilies, chopped from can. couple cans. some times i add grated cheese. mix mayo and a little lime juice to make a dressing. you may have to add more dressing before you serve. i did not include the number of servings, it would be up to you as to how much you want to make. oh, and once in a while if i have it , i add some chopped cilantro. as my youngest grandson said, " you could sell this grandma." lol salt and pepper to taste
