Preheat oven to 350. Cut off the ends off the onions and peel them. Fill large sauce pan half full with water. Bring to boil. Add onions then bring back to boil. Cook over high heat 3-4 min. Drain and rinse under cold running water. Pat dry on paper towels. Put 2-3 tab .evoo in casserole, add onions bake 40-50 min or til golden brown. Remove from oven and cool. Slice onions. Place in salad bowl. Season with pepper and salt now add evoo and vinegar about 1/4 cup mixed together..I love this with mashed anchovies over fresh chopped tomatoes and fennel or baguettes.
