I love this when it's hot and I have a chance to just sit and enjoy, but even on the run, if nice and cold it's yummy
1-lb. jicama, peeled and diced
1/2-c. OJ
3-Tab. cilantro, chopped
salt
2-large oranges, peeled and thinly sliced
fresh cilantro leave with stems for garnish
Combine OJ, cilantro, and salt in a small bowl..Pour over diced jicama and chill for at least 4 hours. Transfer jicama with slotted spoon to serving platter. Arrange slices of oranges around the jicama and garnish with cilantro stems
