ORANGE (OR GRAPEFRUIT) SALAD WITH JICAMA

This is an easy salad to put together. The candied pecans can be made ahead of time and stored in an airtight container. The recipe makes more candied pecans than you will use in this salad, but you can use them in another salad or munch on them for snacks. OR Trader Joe's makes some fantastic Pecan Pralines which are also good, if you're looking for a shortcut.

Serves 4.

DRESSING:

5 garlic cloves
1/2 small jalepeno chili
1/4 cup sugar
1/2 cup rice vinegar
1 cup soy sauce
1 cup water

1 pound red cabbage, cored and shredded (about 4 cups)
1/2 jicama, peeled and shredded (about 3 cups)
3-4 oranges or 1 large pink grapefruit, peeled and sectioned
1/2 cup Candied Pecans (recipe follows) or Trader Joe's Pecan Pralines
1 tablespoon olive oil
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh mint

FOR THE DRESSING:
In a mortar or a food processor, pound the garlic, chili and sugar to a paste. Blend in the vinegar, soy sauce and water.

FOR THE SALAD:

Toss together the cabbage, jicama, oranges or grapefruit, pecans, olive oil, cilantro and mint. Pour dressing over all. Toss all ingredients together and serve.
