Papaya seed dressing

Don't throw them seeds away!! Try this!!

-papaya seeds from 1 papaya
-extra virgin olive oil 1/2 cup
-balsamic vinegar 1/2 tbsp
-1/2 of small onion, diced
-sugar 50g (+ or -, taste as you blend, adjust the amount to your liking)
-salt (opitonal)

rinse the seeds well under running water, drain and pat dry.
crush the seeds and onion in a blender/food processor, adding the oil little by little. Add the balsamic vinegar and sugar and (if preferred) salt to taste, blend well.

This is a lovely, unique salad dressing, the seed has a peppercorn-like spiciness, balanced out with the balsamic vinegar and sugar. I particularly like it over julienned veggies with the oriental rice sticks (noodles)!!
