Pea salad. Nice for Christmas for the colors

1 16 oz. package frozen peas (small are especially good) thawed
1/2 C seeded and diced cucumber
1/2 C diced red bell pepper ( you can also use green peppers if desired)
3-4 ribs celery, diced.
1 small red onion, diced
3/4 tsp dried tarragon
good dash of dried dill
S&P
6-8 slices bacon, fried and chopped--optional
1/4C cheddar cheese, coarsely shredded--optional
OR crumbled feta cheese

Dressing
1/3C mayonnaise + 1/3C sour cream
Mix the ingredients and the dressing. Fold in the optional cheese and bacon after mixing if using them.
 
I'll have to try this soon. Looking for a pea salad was what brought me here over 2 years ago. Thanks for posting.
