A dear friend just dropped by and brought us this for our family dinner tomorrow. I tasted it, it's different and I really love the taste.
She used several lbs of small Yukon golds to this she added a small can of sliced black olives,about 8 oz of pesto make sure it has garlic, 1 cup of extra parmesan, 1/2 c. fresh shredded basil and salt and pepper.Everything was mixed together. On top more shredded basil...Like I said it's different but very tasty...I am tempted to put a bowl of chopped tomatoes alongside..What do you think...

Yummy! I've used pesto in a jar as part of a dressing for a mac salad (combined with some Miracle Whip). Easy Peasy!
