Since we are having a pretty filling dinner tonight and since I had portions of different grilled and steamed veggies, we had salad for lunch..It turned out pretty nice too.
I use some grilled asparagus cut in pieces,julienne beets,carrots,some baby steamed green beans,artichoke hearts, cucumber slices,radishes,green onions,avocado slices,small orange cherry tomatoes,. I put them on a bed of mixed lettuces,arugula,butter and some shredded romaine..I made a dressing with mayo,sweet pickle relish,lemon juice,several dashes of tabasco, a shot of worcestershire,and some whipping cream, then I added some tiny bay shrimp and crabmeat to the dressing poured it over the lettuce and veggies and sprinkled several chopped hard cooked eggs over that...that and iced tea and a small french roll..I should last til dinner now
